I watched all four peaks — St. Helens, Hood, Adams and Rainier — from shortly after the plane departed, sitting on the left (North) side of the plane with FAA sectional maps (of the Seattle and Klamath Falls area, which together cover the whole region). Indeed, the picture is of Adams and Rainier. At the point it was taken, we were well East of Hood, and St. Helens was in the distance behind Hood, off to the left of the frame. I do have a picture of all four, but it's not an attractive one. :-) Here's a map that roughly helps place the peaks.
